Food & Cookery
In
recent times the excellence of the Moroccan cuisine has become more
widely recognized; it is a healthy and varied diet, drawing from Arab,
Berber, Jewish, African and French traditions. Amongst the many tasty
dishes are tajines (mildly spiced and cooked in a clay dish), couscous
and
wonderful fresh salads.
There is an abundance of locally grown produce, used imaginatively with spices, herbs and oils such as arganl, an exquisite orange nutty flavoured oil. Round Moroccan flat bread is excellent, its flavour improved by the sourdough starter.
Thanks to the wonderful year round warm climate and irrigation, together with being close to one of the finest fishing grounds in the world, there are always plentiful supplies of fresh fish, fruit & vegetables including dates, oranges, bananas, figs, melons, avocados etc which are harvested and bought daily at the local market (frozen food is almost unheard of!)
Special Diets
Vegan, vegetarian, gluten and dairy free diets can be offered. There
are some lovely Moroccan vegetarian dishes (most also vegan).

in
the World. Some Moroccan tour operators say that hotels can't cater
adequately for vegetarians; we do!

Cookery lessons in Taroudant
We offer you an opportunity to learn to make anything from Moroccan bread to tagines to wedding pastries with our cooks, Fatima & Latifa, who have been widely praised by our clients. They will let you into the secrets of their cooking methods and unusual ingredients!
We offer trips to the market where you can learn how to identify
good
quality local ingredients such as saffron, argan oil, spices, honey,
dates,
figs and nuts. We also arrange excursions which give you opportunities
to
see production of (and buy) sustainably produced cold pressed oils and
local
crops in the Berber villages nearby.
A cookery lesson is available most days in the
late afternoon, when you learn how to make the dishes for
the evening
meal. There are also several
cookery
books in the library.
If you are interested in herbs and are travelling near Marrakech we recommend a visit to the Jardin Bio-Aromatique d'Ourika, a picturesque organic garden of aromatic herbs with educational facilities.
Our recipe book
We put this together to raise money for local projects we support. We're offering free downloads of some of our vegetarian recipes, as cooked by our staff, Fatima and Latifa, as a taster (we also cater for non-vegetarians!).
Please note that in Morocco a teaspoonful means a heaped one!
