LES BORJS DE LA KASBAH - half day cookery course

The relaxed lessons in the courtyard of the Les Borjs de la Kasbah hotel are especially suited to visitors wanting a simple introduction to a number of Morocco’s favorite recipes.  Lessons are given in the morning by one of the restaurant’s chefs, assisted by a translator if needed.

Chefs Demonstration

Cookery lessons started in 2008, and are given on demand most mornings for around 3 hours, for 1, 2 or 3 days, for groups from 2 to 10 in size.  A chef from the hotel’s restaurant takes the course, assisted by a cook.  Aziz, the head chef was trained at the institute of hoteliers and, after a brief experience in a Paris kitchen, has been head chef at Les Borjs for 2 years and has developed a highly recommended menu in the restaurant.

Lessons start with an optional wander around a local souk, where fresh ingredients are selected for the morning’s cooking, and the cooking instruction takes place in the light and airy breakfast restaurant courtyard, next door to the main kitchen.  The chef recommends three typically Moroccan dishes to be covered (starter, main and desert), but a visitor can express alternative preferences a day before the lesson takes place. 

A morning will fly by as one takes on the basics of Moroccan cooking – aromatic cooking with fresh ingredients – and, whether it’s one of the classic tajines, a seafood briouates (flaky aromatic pastry triangles), or a makroute (bite sized sweet Moroccan pastry), participants will have hands on experience of main techniques, before sitting down for eating the product of their labours at lunch.
