L'Atelier Madada

A former almond warehouse at the entrance of Essaouira’s medina, l’Atelier Madada offers half-day cooking and pastry workshops.

A small group cookery workshop run by a professional and experienced team. Discover the secrets of Moroccan gastronomy in a friendly and informal atmosphere.

Please Note: Naturally Morocco's cookery courses are only available as part of a package booked through us that includes accommodation and transport.

L'Atlerier Madada

L’Atelier Madada is located on the ground floor of Madada Mogador guest house, and both share the same quest for excellence and high service quality.  However, they remain two different entities, allowing the workshop to welcome customers from any hotel or guest house.  You can choose to do one or both of the half-day workshops:

Moroccan Cooking Workshop (10h30 - 14h30)

Oriental Pastry Workshop (15h30 - 17h00)

In small groups (8 persons maximum) and supervised by a professional and experienced team, a cook and a trilingual presenter, you can discover the secrets of Moroccan gastronomy.  In a friendly and informal atmosphere, the half-day workshops will teach you how to prepare a full traditional meal that you could then easily reproduce for your friends and family.

Cooks select appropriate menus daily based on seasonal availability of ingredients, but if you have a particular favourite, please indicate at booking stage or visit the workshop at least one day before your course is booked.

Sample of menus:

 Ø Courgettes chermoula; Beef tajine with caramelised tomatoes and carrots

 Ø Tchakchouka; Chicken pastilla

 Ø Zaalouk;  Lamb tajine with almonds and dates

 Ø Harira; Sea-bass tajine with vegetables

 Ø 7 vegetables couscous with meat; Peach salad with spices

 Ø Briouates; Chicken tajine with raisins & caramelised onions

 Ø Lentils salad; Kefta tajine with eggs

 Ø Bissara; Lamb tajine with apples & quinces

 Ø Bakkoula;  Seafood pastilla

 Ø Marinated fresh beans salad; Squid tajine

After the course, participants gather in the oriental lounge to eat the prepared dishes. Wine is available at extra cost.

Finally after lunch, you can, if you wish, enjoy a walking tour of the souks where you will get plenty more tips on the spices and the local seasonal products.
